Milk is one of the most tested and regulated products you can buy. It goes through numerous steps to ensure it is safe for you and your family to enjoy.

Making sure milk is safe for consumers – that includes me and my family – is a very important part of dairy farming. After the cows are milked, the milk is cooled to 39o F and stored in the bulk tank until it is picked up. Our milk is picked up once a day, and then goes over to the processing plant only 7 miles away where it is made into Sartori cheese.

Before the milk leaves the farm, a sample is taken from the bulk tank. That sample is tested for antibiotics, among other things. When the truck hauling the milk gets to the plant, it’s tested again. There are numerous checks and re-checks to ensure the milk is safe to drink. If a sample comes back with antibiotics or something in the milk that shouldn’t be, our milk gets dumped right down the drain. We do everything we can to make sure the product is safe.

At the processing plant, the milk is pasteurized. During this process, the milk is heated up, and then quickly cooled down to eliminate certain bacteria, making sure the milk is safe consume.

Dairy farmers take a lot of care and pride in knowing they are working hard to produce the best quality milk possible.
